The perfect weekend morning is a lazy one. Sitting in my pj’s (possibly still in bed…) with a book, some coffee and a soft, sweet scone. Really I can stretch these mornings on into the afternoon, if I get lucky.  My favourite scones of all time are these Lemon Scone Cookies. I call them cookies because I like to add pudding mix to the recipe, it adds a ton of flavour and keeps the scones super soft. It also makes them a bit dense instead of being light and dry like a traditional scone. They are the perfect thing to serve at bridal and baby showers. Your guests will begging for the recipe. And the best part of all? These are the easiest scones to make. Trust me, you’ll be done in no time.

These scones taste great with the glaze on top, but you can certainly serve them with much more.  Fresh fruit or compotes, lemon curd, clotted or whipped cream or simply powdered sugar are all perfect options.

To reheat a scone you could put them in the over at 300F for about 5-10 min or place them right into the microwave.

Soft and Sweet Lemon Scone Cookies

Perfect for breakfast and dessert. No trips to the bakery, simple ingredients makes for easy baking!
Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes
Servings 8 Scones

Ingredients

  • 2 cups All-purpose flour
  • 2 tbsp Sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 6 tbsp Cold unsalted butter, cut into pieces
  • 1 box (99g) Instant lemon pudding mix
  • 1/2 cup Cream
  • 1 Egg
  • 1 tsp Vanilla extract

Glaze

  • 1 cup Icing sugar
  • 1 tbsp Milk
  • 1/2 tsp Vanilla extract Clear extract works best

Instructions

  • Preheat oven to 425.
  • Line a baking sheet with parchment paper.
  • Whisk together flour, sugar, baking powder, and salt in a large bowl.
  • Add cut up butter and cut into the flour mix with a pastry blender or two knives until the butter is mixed in and the mixture is crumbly.
  • Stir in the pudding mix.
  • Pour the cream into a small bowl. Add the egg and vanilla, whisk to combine.
  • Make a hole into the centre of the dry ingredients and add the cream mixture. Stir until just combined.
  • Turn the dough out onto the counter and knead it a few times until the mix is smooth. Cut the dough in half. Form each half into a circle that's about 1/2" thick. Slice each circle into four wedges.
  • Place the scones onto the cookie sheet and bake for 8-10 minutes. Cool completely before baking.

Glaze

  • Whisk together all the ingredients. Spread onto the scones.

This year Easter is in the First week of April, last year it was late April.  Easter is one of those holidays that does not have a specific date attached to it like other popular holidays such as Christmas or New Year’s Day.  Something that I didn’t know is how Easter Sunday is determined – it is the first Sunday after the first full moon in spring.  This means that Easter Sunday could fall anywhere from March 22 to April 25th!  Since we live in Central Ontario this also means that we could be celebrating Easter inside away from a foot of snow, or outside enjoying the warmth of the sun.   The recipe is very simple to make and requires no baking.  You do need a couple of hours to allow it to set, but it’s a simple fact of leaving it in the refrigerator!  The Easy Easter Cheesecake recipe is very simple to make, using only a few ingredients.  It has a light cheesecake flavor and is not heavy like a traditional cheesecake, this is thanks to yummy cool whip! Easy Avocado Devilled Egg Cucumber Stacks

Whatever the occasion these Easy Avocado Devilled Egg Cucumber Stacks are easy to make and so yummy you won’t have any left over!
Course Appetizer
Prep Time 15 minutes
Cook Time 7 minutes
Total Time 22 minutes

Ingredients

  • 4 boiled eggs whites cut into rings, yolks removed and separated
  • 1 avocado peeled, seed removed
  • 2 tbsp mayonnaise
  • 1/8 tsp salt
  • 1/4 tsp ground black pepper to taste
  • 1 cucumber sliced, diagonally

Instructions

  • Boil the eggs until hard boiled, about 10 min.  Once boiled place the eggs into a pot of cold water and once cooled, peel them.
  • Cut the eggs into round slices.  Try not to break the rings.  The egg yolks should fall out as the rings are cut.  Set them aside.
  • Cut the avocado in half, peel it and remove the seed. Slice the avocado.
  • Place the egg yolks, avocado, mayo, salt and pepper into a bowl and mix them together.  You can use a fork for a lumpy texture, or a food processor for a smooth, creamy texture.  I used a fork.
  • Slice your cucumber into thick slices, in a diagonal direction.  
  • Arrange the prepared cucumbers on a platter, top the cucumbers with one egg white ring each, then add some of the avocado mixture to the middle of the egg ring.  
  • Consider garnishing with chives, cranberries or paprika

Pumpkin Macaroons

Tasty, cute and easy to make. These Pumpkin Macaroons won't disappoint and are perfect for any occasion. Whip up a batch today and see for yourself! 

Ingredients

  • 1/3 cup sugar
  • 1 egg white
  • 1 1/2 cups shredded coconut
  • 1/4 cup crushed praline peanuts
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • 3/4 tsp pumpkin spice
  • 1/8 tsp cinnamon sugar
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 350 F.  
  • In a large bowl, whisk the egg white until fluffy adding the sugar in slowly. 
  • Add the coconut, and the rest of the ingredients into the sugar/egg mixture and stir them until well blended.
  • Roll the mixture into balls (about 1 1/2 inch) and place them onto the cookie sheet
  • Place one pumpkin seed into the the top of each ball (to create a stem)
  • Bake them for about 10 minutes or until golden brown.

Our mom has been making this Banana Bread for as long as I can remember and we have only just discovered that it tastes even better when made in bars.  I’m excited to pass this recipe down to my girls who love baking too.  When Victoria and I were young, we used to ‘help’ in the kitchen by mixing ingredients or cracking eggs.   Baking was always so rewarding, starting from scratch and creating something delicious was always fun.  Now that I have kids of my own, I love to be in the kitchen with them…as frustrating as it can be at times, the value of baking is tremendous for all of us!

 

This recipe is an easy way to use up those bananas that have been forgotten about and if needed, this recipe can be frozen for use later if it lasts long enough to get into the freezer that is!  Bring them to your next social event or have them at a family barbecue, I bet the requests for more won’t be far away.

Easy Banana Bread Bar Recipe

Banana Bread Bars

Moist and dense these bars are good for any occasion as a dessert or snack.

Ingredients

  • 2 tsp lemon juice
  • 2/3 cup milk
  • 2 1/3 cups flour
  • 1 2/3 cups sugar
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2/3 cup shortening
  • 2/3 cup bananas ripe, mashed
  • 2 eggs

Icing

  • 1 pkg cream cheese about 8 oz, softened
  • 1/4 cup butter
  • 1 tsp vanilla
  • 3 cups icing sugar

Instructions

  • Preheat oven at 350 F
  • Mix lemon juice and milk together
  • In a large bowl mix all dry ingredients together.  Add the shortening, bananas and sour milk, mix until the flour is damp.
  • Beat the mixture for 2 minutes, add the eggs and beat again.
  • Bake in 2 greased and floured pans for 35min or until toothpick comes out clean.

Icing

  • In a large bowl beat the cream cheese, vanilla and butter until well blended.
  • Gradually add in the icing sugar, until completely mixed.

Notes

This recipe tastes equally as good with or without the icing, so if you want to save a few (or more) calories or sticky fingers...go without.  You won't miss out on the delicious banana goodness!
Consider adding chocolate chips, blueberries or nuts to add some extra flavour!

Traditional Poutine with Homemade Gravy Recipe

This classic poutine begins with thick potato wedges and is finished to perfection with a homemade gravy. 
Course Side Dish
Servings 4 people

Ingredients

  • 3 lbs potatoes
  • 4 tbsp olive oil
  • 1 pinch salt and pepper
  • 3 cups cheddar cheese curds

For the Gravy

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups beef broth
  • 2 pinches salt and pepper
  • 1 tbsp powdered gravy enhancer

Instructions

  • Preheat the oven to 350F. Prepare the potatoes for cutting by washing and removing any dark or broken areas. Cut the potatoes into wedge sized pieces. Place them in a large bowl filled with cool water and soak for 5 min, although you could leave them in there for 2 hours, and to be honest the longer the better!
  • Transfer the potatoes into a medium sized bowl, add the olive oil and salt/pepper. Toss until well coated.
  • Place the potatoes to a cooking sheet and bake for 20-30 minutes or until they are just golden brown. Turning them every 5-8 minutes.
  • GRAVY. While the potatoes are baking begin making the gravy. Melt the butter in a saucepan over medium heat. Add in the flour slowly mixing well, removing all lumps. Add the salt and pepper.
  • Over medium heat, continue to cook for about 5 minutes, stirring constantly.
  • Stir in the beef broth in small portions, continue to stir.
  • Once the all the broth has been added stir in the gravy enhancer. Continue stirring until the gravy thickens.
  • Back to the Poutine. Once your potato wedges are done, transfer them to a serving dish. Top with the cheese curds and finished gravy. Then, enjoy!!

Steamé – An Iconic Montreal Dish https://www.andthenhome.com/recipe/steame-iconic-montreal-dish/ https://www.andthenhome.com/recipe/steame-iconic-montreal-dish/#respond Wed, 14 Jun 2017 11:30:40 +0000 https://www.andthenhome.com/?post_type=recipe&p=1688 With St. Jean Baptiste right around the corner I felt the need to make Steamés, An Iconic Montreal Dish.  My husband’s family is from Montreal so he naturally has fond memories of all the amazing things Montreal has to offer.  We lived there ourselves for 3 years before we got married and enjoyed plenty of Quebec’s tasty food!  Since returning to our southern Ontario roots we occasionally reminisce about the great food and awesome festivals Montreal had to offer.   One of our favourite things to eat when living in Montreal was a steamie (or steamé in French).  If you’re not familiar with these Montreal hot dogs, they are a fast food staple and you are missing out!  When we lived there we were younger and these hot dogs were perfect after a long night of…. dancing.  When I make them now it’s for a much different reason – my children will eat them!  Whatever your reason for wanting to eat these yummy hot dogs – one thing is true, steamies are delicious!!  There are typically three ways steamies are sold in restaurants, they are: All-dressed – has mustard, chopped onion and fresh coleslaw or cabbage.   Michigan hot dog – has spaghetti sauce or chili sauce, with or without onions and mustard. Supreme – has cheese and bacon.   There are a few popular restaurants in Montreal that sell steamies such as La Belle Province and Lafleur Restaurants but if you’re looking to make your own see the recipe below.  Our recipe is a little different then the classic steamie.  We choose to make our steamies little differently by adding sauerkraut instead of cabbage and my hubs prefers relish over mustard.     Steamé – An Iconic Montreal Dish   Ingredients: Hot dogs Yellow mustard Relish (if preferred) Chopped onion Sauerkraut  Instructions: 1.  Place about 2 inches of water into a pot and mount a steamer, cover with a lid.  Over medium heat bring the water a gentle boil. 2.  Place the hot dogs into the steamer.  Cover and cook for 2-4 minutes.  You can place the buns in the steamer also for 2-3 minutes to make them warm if you prefer.   3.  Top with mustard, onions and sauerkraut (and relish if you would like).  There you have it, a delicious, quick dinner that the whole family will love.  They could bring you to the wonderful city of Montreal or straight to the dinner table with little fuss.  If you’re looking for an easy appetizer try this Baked Mediterranean Feta Cheese Appy and for dessert serve these Easy Lemon Blueberry Squares.
