Soft and Sweet Lemon Scone Cookies

The perfect weekend morning is a lazy one. Sitting in my pj’s (possibly still in bed…) with a book, some coffee and a soft, sweet scone. Really I can stretch these mornings on into the afternoon, if I get lucky. My favourite scones of all time are these Lemon Scone Cookies. I call them cookies because I like to add pudding mix to the recipe, it adds a ton of flavour and keeps the scones super soft. It also makes them a bit dense instead of being light and dry like a traditional scone. They are the perfect thing to serve at bridal and baby showers. Your guests will begging for the recipe. And the best part of all? These are the easiest scones to make.¬†Trust me, you’ll be done in no time.
