The perfect weekend morning is a lazy one. Sitting in my pj’s (possibly still in bed…) with a book, some coffee and a soft, sweet scone. Really I can stretch these mornings on into the afternoon, if I get lucky.  My favourite scones of all time are these Lemon Scone Cookies. I call them cookies because I like to add pudding mix to the recipe, it adds a ton of flavour and keeps the scones super soft. It also makes them a bit dense instead of being light and dry like a traditional scone. They are the perfect thing to serve at bridal and baby showers. Your guests will begging for the recipe. And the best part of all? These are the easiest scones to make. Trust me, you’ll be done in no time.

These scones taste great with the glaze on top, but you can certainly serve them with much more.  Fresh fruit or compotes, lemon curd, clotted or whipped cream or simply powdered sugar are all perfect options.

To reheat a scone you could put them in the over at 300F for about 5-10 min or place them right into the microwave.

Soft and Sweet Lemon Scone Cookies

Perfect for breakfast and dessert. No trips to the bakery, simple ingredients makes for easy baking!
Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes
Servings 8 Scones

Ingredients

  • 2 cups All-purpose flour
  • 2 tbsp Sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 6 tbsp Cold unsalted butter, cut into pieces
  • 1 box (99g) Instant lemon pudding mix
  • 1/2 cup Cream
  • 1 Egg
  • 1 tsp Vanilla extract

Glaze

  • 1 cup Icing sugar
  • 1 tbsp Milk
  • 1/2 tsp Vanilla extract Clear extract works best

Instructions

  • Preheat oven to 425.
  • Line a baking sheet with parchment paper.
  • Whisk together flour, sugar, baking powder, and salt in a large bowl.
  • Add cut up butter and cut into the flour mix with a pastry blender or two knives until the butter is mixed in and the mixture is crumbly.
  • Stir in the pudding mix.
  • Pour the cream into a small bowl. Add the egg and vanilla, whisk to combine.
  • Make a hole into the centre of the dry ingredients and add the cream mixture. Stir until just combined.
  • Turn the dough out onto the counter and knead it a few times until the mix is smooth. Cut the dough in half. Form each half into a circle that's about 1/2" thick. Slice each circle into four wedges.
  • Place the scones onto the cookie sheet and bake for 8-10 minutes. Cool completely before baking.

Glaze

  • Whisk together all the ingredients. Spread onto the scones.

Enjoy! Pro Tip: You can make these scones any flavour you like by switching out the pudding mix – pistachio, strawberry or orange are all great options.

This year Easter is in the First week of April, last year it was late April.  Easter is one of those holidays that does not have a specific date attached to it like other popular holidays such as Christmas or New Year’s Day.  Something that I didn’t know is how Easter Sunday is determined – it is the first Sunday after the first full moon in spring.  This means that Easter Sunday could fall anywhere from March 22 to April 25th!  Since we live in Central Ontario this also means that we could be celebrating Easter inside away from a foot of snow, or outside enjoying the warmth of the sun.   The recipe is very simple to make and requires no baking.  You do need a couple of hours to allow it to set, but it’s a simple fact of leaving it in the refrigerator!  The Easy Easter Cheesecake recipe is very simple to make, using only a few ingredients.  It has a light cheesecake flavor and is not heavy like a traditional cheesecake, this is thanks to yummy cool whip! Easy Easter Cheesecake Recipe   Ingredients 2 cups whipped topping 1/2 cup sugar 2 pkgs (8 0z each) cream cheese green food colouring (optional) 1 box (400g) chocolate baking crumbs festive decorations (flake bar, speckled egg M&M’s, and marshmallow chicks are used here) Steps: 1.  Prepare crumb shell as directed on package.  Set aside.   2.  Next, beat the cream cheese and sugar together until it is well mixed.  Add the cool whip in slowly, mixing well with each spoonful.  If desired add some green food colouring.   3.  Spoon the mixture into the prepared crust. 4.  Place the cake in the refrigerator for about 3 hours.   5.  Top with festive decorations before serving to friends and family! Our mom has been making this Banana Bread for as long as I can remember and we have only just discovered that it tastes even better when made in bars.  I’m excited to pass this recipe down to my girls who love baking too.  When Victoria and I were young, we used to ‘help’ in the kitchen by mixing ingredients or cracking eggs.   Baking was always so rewarding, starting from scratch and creating something delicious was always fun.  Now that I have kids of my own, I love to be in the kitchen with them…as frustrating as it can be at times, the value of baking is tremendous for all of us!

 

This recipe is an easy way to use up those bananas that have been forgotten about and if needed, this recipe can be frozen for use later if it lasts long enough to get into the freezer that is!  Bring them to your next social event or have them at a family barbecue, I bet the requests for more won’t be far away.

 

 
Easy Banana Bread Bar Recipe

 

Easy Banana Bread Bar Recipe

Banana Bread Bars

Moist and dense these bars are good for any occasion as a dessert or snack.

Ingredients

  • 2 tsp lemon juice
  • 2/3 cup milk
  • 2 1/3 cups flour
  • 1 2/3 cups sugar
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2/3 cup shortening
  • 2/3 cup bananas ripe, mashed
  • 2 eggs

Icing

  • 1 pkg cream cheese about 8 oz, softened
  • 1/4 cup butter
  • 1 tsp vanilla
  • 3 cups icing sugar

Instructions

  • Preheat oven at 350 F
  • Mix lemon juice and milk together
  • In a large bowl mix all dry ingredients together.  Add the shortening, bananas and sour milk, mix until the flour is damp.
  • Beat the mixture for 2 minutes, add the eggs and beat again.
  • Bake in 2 greased and floured pans for 35min or until toothpick comes out clean.

Icing

  • In a large bowl beat the cream cheese, vanilla and butter until well blended.
  • Gradually add in the icing sugar, until completely mixed.

Notes

This recipe tastes equally as good with or without the icing, so if you want to save a few (or more) calories or sticky fingers...go without.  You won't miss out on the delicious banana goodness!
Consider adding chocolate chips, blueberries or nuts to add some extra flavour!

Yee-haw! The Calgary Stampede is in full swing and the weather couldn’t be better this year. One of the best things about the Calgary Stampede is the food. Every year vendors come up with innovative ideas to tickle your taste buds – this year features Canadian Bacon Pickle Balls, Deep Fried Cookie Dough and Korean Barbecue Beef Bulgogi Hotdog – just name a few. In fact, that’s only three of the 44 new foods available this year! We thought that for those of you who can’t make it out to taste all the new flavours or old favourites we’d round up the Top Ten Stampede Recipes that you can make at home. These recipes are guaranteed to tempt your taste buds, so be sure to give them a try!

1. Food Network – Carrot Cake Perogies

These delicious perogies were available a few years ago so this is a good recipe for Stampeders and for those who can’t make it to the grounds. They are filled with carrot cake spiced with cinnamon and drizzled with caramel sauce, for a sweet twist on a usually savoury dish.

2. And Then Home – Traditional Poutine with a Homemade Gravy

6. National Caesar Day – The Caesar Drink

Essential to any Stampede breakfast, brunch, lunch or dinner,  is the Caesar.  At its simplest it’s made with vodka, Clamato juice, hot sauce and Worcestershire sauce. You can make your own lemon filling if you’d like, but I chose to take the easy way out and buy pre-made canned lemon pie filling.  I used fresh blueberries to complement the lemon flavour.  The crust and crumble are made with a handful of ingredients, all of which you likely have in your pantry already.  Since the crust and crumble are made at the same time (only a portion is saved with added sugar for the crumble) it cuts on time and the flavour is not over powering.  In fact, it tends to tame the lemon a little.       What makes this recipe different?   This Lemon Blueberry Square recipe is different from other lemon square recipes because it has a the delicious addition of blueberries.  Also, I am a crust/cookie type of person so I tend to make the squares a little thicker on the bottom.  Because the recipe has a thicker cookie bottom it’s able to support the delicious lemon pie filling, not to mention it tastes that much better.  Let me know what you think, do you prefer a thicker crust?     So, whether you’re attending a barbecue or just having a quiet night in with the family try these Easy Lemon Blueberry Squares.  With only a few ingredients, these Lemon Blueberry Squares are easy to throw together and won’t last long.  This recipe is likely going to become your “go to” recipe for quick desserts this summer.  Let’s take a look at the recipe! Easter eggs are often credited to the Easter bunny, but I like to think that those little malt chocolate eggs (Robin’s Eggs to many) come from Peeps. And how can Peeps make eggs without a nest? Enter Rice Krispies. The Rice Krispie Treat has been a bake sale mainstay for a long, long time. But they’re just boring blocks! You can reshape the mixture into the shape of a nest and then decorate as you please! We’ll get into that. First, let’s cover the recipe. Ingredients: 6 cups of Rice Krispies (of course!) 1 package of marshmallows (10 oz.) 3 tablespoons of butter Okay — let’s get to it! Melt your butter in a stovetop pan. Add the larger marshmallows and stir the mixture until the marshmallows are completely melted. Take the pan off of the heat. Mix your Rice Krispies into the pan. Stir until your Rice Krispies are completely covered. Scoop the mixture into muffin pans and shape the mixture in each muffin slot into a “nest” shape. Allow the “nests” to cool. The Rice Krispie Treat has been a bake sale mainstay for a long, long time. But they’re just boring blocks! You can reshape the mixture into the shape of a nest and then decorate as you please! We’ll get into that. First, let’s cover the recipe.

Ingredients:

6 cups of Rice Krispies (of course!)
1 package of marshmallows (10 oz.)
3 tablespoons of butter

Okay — let’s get to it!

Melt your butter in a stovetop pan. Add the larger marshmallows and stir the mixture until the marshmallows are completely melted. Take the pan off of the heat.

Mix your Rice Krispies into the pan. Stir until your Rice Krispies are completely covered.
Scoop the mixture into muffin pans and shape the mixture in each muffin slot into a “nest” shape.

Allow the “nests” to cool. Now you get to the fun part.
