This fall we took the girls to a pumpkin patch that is locally operated by using the ‘honour system’.  It is a wonderfully stocked pumpkin paradise.  We go every year for a couple of reasons, the first of course being that the girls love it, secondly it’s quiet with not a lot of people to push past, and third as mentioned – it’s locally owned, we are giving back to a family that puts so much effort into producing this experience for us every year.

After we picked out the ‘best carving pumpkin’ in the bunch (and some extra for decor of course!).  We headed out for lunch to make the most of the afternoon.  Since we live in a small town it’s not surprising that we chose to eat at a small diner.  The girls had their usual grilled cheese and fries, my husband opted for the sandwich and soup special and I picked a light salad…with a hamburger (I’m pregnant remember…I can only resist so much!).  I was certain my burger would beat any soup and salad combo…but the special happen to be a pumpkin soup.  It never occurred to me to make or even taste a pumpkin soup before this day and now I can’t imagine why.  Pumpkin soup is delicious!

So, my mission began, I wanted to recreate this soup that my husband so rudely enjoyed in front of me and while it doesn’t taste exactly the same, it is equally delicious!  I was quite happy with how it turned out and I can’t wait to share it with you.  It’s very creamy and lightly spiced, leaving the pumpkin flavour to do it’s thing.  It is easy to make with ingredients that you likely have in your cupboards already.  You can always roast your own pumpkins and add your own spices, I however used canned pumpkin and pumpkin spice.  Oh, and I found the secret ingredient in pumpkin soup to be apple sauce!  It changes the soup entirely, creating a sweet touch.  This recipe is perfect for Thanksgiving and fall right through winter, so be sure to enjoy it more then once!

Easy Pumpkin Soup Recipe – One Secret Ingredient

 This creamy pumpkin soup is perfect from fall right through winter.  It pairs nicely with sandwiches or just by itself.  Applesauce is a key ingredient in this recipe adding a sweet taste, a must try!
 
 INGREDIENTS
 
– 4 cups vegetable broth
– 1 can (796mls) pure pumpkin
– 1/2 cup apple sauce
– 1/2 tsp pumpkin spice
– 1 tbsp olive oil for cooking
– 1 cup diced onion
– 1 cup chopped celery
– 1 clove minced garlic
– 1 cup heavy cream
 
INSTRUCTIONS
 
1.  Place the pumpkin and vegetable broth in a large saucepan and bring to a boil.  Reduce heat and add applesauce and pumpkin spice, allow to simmer for 20min.
 
2.  Meanwhile, in a medium saucepan over medium heat add the olive oil, onion, celery and garlic. Cook for 2-3 minutes, or until slightly browned and translucent.  Add to the large saucepan.
 
3.  OPTIONAL – If you want a smooth soup – Transfer the soup mixture to a blender to puree the soup, once finished return the soup to the saucepan and allow it to simmer for 5-10min.
 
4.  Remove from heat and stir in the heavy cream.
 
Serve with or without sandwiches and salad, this recipe tastes amazing all on it’s own!

Instructions
