The recipe does take some prep, you have to boil the eggs like you would traditional devilled eggs, but instead of cutting them length wise you need to cut them in circles.  Check out the pictures for help.  Once the eggs whites are in circles and the yolks are separated you just need to blend the yolks with the avocado (and a few other ingredients) then set them up and you’re good to go.   A few reasons to love this recipe… – it’s easy to make – it tastes good – it’s healthy – it’s easy to make…wait.. Easy Avocado Devilled Egg Cucumber Stacks

Whatever the occasion these Easy Avocado Devilled Egg Cucumber Stacks are easy to make and so yummy you won’t have any left over!

Total Time 22 minutes

Ingredients

  • 4 boiled eggs whites cut into rings, yolks removed and separated
  • 1 avocado peeled, seed removed
  • 2 tbsp mayonnaise
  • 1/8 tsp salt
  • 1/4 tsp ground black pepper to taste
  • 1 cucumber sliced, diagonally

Instructions

  • Boil the eggs until hard boiled, about 10 min.  Once boiled place the eggs into a pot of cold water and once cooled, peel them.
  • Cut the eggs into round slices.  Try not to break the rings.  The egg yolks should fall out as the rings are cut.  Set them aside.
  • Cut the avocado in half, peel it and remove the seed. Slice the avocado.
  • Place the egg yolks, avocado, mayo, salt and pepper into a bowl and mix them together.  You can use a fork for a lumpy texture, or a food processor for a smooth, creamy texture.  I used a fork.
  • Slice your cucumber into thick slices, in a diagonal direction.  
  • Arrange the prepared cucumbers on a platter, top the cucumbers with one egg white ring each, then add some of the avocado mixture to the middle of the egg ring.  
  • Consider garnishing with chives, cranberries or paprika
