Campfire Sausage and Rotini Pasta

For this August long weekend, we will be taking advantage of the amazing weather we’ve been having and going camping. For us, camping leans towards the rustic side. No tent trailers or RV’s, just a tent with an air mattress. We have a camping stove too, but most of our cooking happens over the fire. Of course, we love the staples like roasting sausages and veggie dogs. But we do like to mix it up with some easy, pre-made meals for variety. We pre-make meals at home because the last thing anyone wants when camping, is dishes. By making a meal at home and then warming it up on the fire, it leaves us plenty of time for hiking, swimming and a little fireside drinking. ?

Of course, in our house we make two dishes. One with sausage for M and one vegetarian version for me. For my version, I simply omit the sausage. But you could always add veggie dogs for protein, the spicy Italian flavour would work perfectly in this recipe. Another vegetarian option would be adding some peppers or mushrooms, one of the great thing about pasta is its versatility so be sure to experiment!

Campfire Sausage and Rotini Pasta

Ingredients:

  • 4 cups Rotini pasta
  • 4 Italian sausages, cut into chunks
  • 1 Medium red onion, sliced
  • 1 Can tomato paste
  • 3 Sun-dried tomato halves, chopped
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Red-wine vinegar
  • 2 Garlic cloves, minced
  • 2 tbsp Olive oil
  • Chili flakes to taste 
  • ¼ cup Parmesan cheese

Steps:

1.Cook pasta as directed on package. Meanwhile, brown sausage in a large skillet.

2. While the pasta and sausages are cooking, mix together the sun-dried tomatoes, vinegar, garlic and olive oil  and chili flakes in a small bowl.

3. Drain the sausages and stir the onions and tomato paste into the skillet. Cook for 15 minutes, stirring occasionally.

4. Remove skillet from heat and stir in the vinegar mixture.

5. Toss sausage mixture with the cooked pasta. Transfer into a foil to go container for warming later.

6.Warm over the fire for about 15 minutes, keeping a close eye on it so it doesn’t burn. Add the Parmesan cheese before serving.
